Coffee Cream Sponge Recipe

Ingredients
2 eggs
500gms granulated sugar
500 gms sr flour
250gms margarine
500 gms icing sugar
Liquid coffee to taste


DIRECTIONS
Beat eggs well, add sugar & beat until sugar is dissolved, beat in flour (no need to fold in flour). lightly grease six sponge tins & put evenly into tins.

Cook for 20-25 mins @ 150, gas mark 2.

Set on cooling rack.

CREAM:- mix fat and icing sugar until creamy, and add coffee to taste.

Layer one sixth of cream between two sponges and then cream over the top, decorating as desired.

Comments: Will freeze well but as it is a non fat sponge it will only keep for a short while.
