DATE AND WALNUT LOAF

Ingredients
8oz block dates, cut into small chunks
Pinch baking soda
¼ pt boiling water
3oz unsalted butter
3oz caster sugar
1 egg
8oz self-raising flour
3oz walnuts, roughly chopped

Preparation
Add boiling water to dates with baking soda. Stir and set aside.

Cream butter and sugar. Beat in egg. Stir in flour and nuts and then the dates.

Place in a greased and lined loaf tin and bake at 180C for 50 minutes.

Wrap in foil and keep for at least a day before cutting. Serve spread thickly with butter (NOT margarine!)
