UPDATE: A reader has kindly sent us a much easier alternative recipe for Eve's Pudding - have a look!

Ingredients
450g/1lb cooking apples, peeled, cored and sliced
150g/5oz sugar
50g/1 3/4 oz sultanas
6 tbsp butter, plus extra for greasing
1 egg, beaten
2-3 tbsp milk
self-raising flour

NOTE: As readers have pointed out, no quantity is given for the self raising flour. This recipe was submitted by a reader with whom we have lost contact, so if anyone can suggest a quantity for the flour, please let us know and we'll share it with everyone!

DIRECTIONS
Grease an oven dish with butter. Mix the apples with half of the sugar and the sultanas, and spoon into the dish.

In a bowl, cream the butter and sugar together until pale. Gradually add the egg. Carefully fold in the self-raising flour and the milk until the mixture is soft and drops from your spoon.

Spread the mixture over the apples.

Bake in a preheated oven, 180 C/350 F/Gas Mark, for about 40 minutes or until the sponge is golden brown.

Comments: If you like, sprinkle some flaked almonds on top before putting in the oven. Serve with custard or cream.
