Eve's Pudding Recipe

Ingredients
A little butter, for greasing
750 g/1.5 lb cooking (tart) apples, sliced

5 ml/1 tsp ground cinnamon
15 ml/1 tbsp water
75 g/3 oz light brown sugar

50 g/2 oz/0.25 cup soft tub margarine
50 g/2 oz/0.25 cup caster (superfine) sugar, plus extra for sprinkling
1 egg, beaten
100 g/4 oz/1 cup self-raising (self-rising) flour
30 ml/2 tbsp milk
Pouring cream, to serve

Directions
Butter a 1.2 liter/2 pt/5 cup ovenproof dish. Mix together the apple slices and cinnamon and place in the dish. Add the water and cover with the brown sugar. Beat together the margarine and caster sugar until light and fluffy. Beat in the egg.

Sift the flour over the surface and fold in with a metal spoon. Add enough of the milk to form a soft, dropping consistency. Spread over the apple mixture. Bake in a preheated oven at 180?C/350?F/gas mark 4 for 45 minutes until firm, well risen and the apples are cooked through.

Sprinkle with a little extra caster sugar and serve with pouring cream.d the batter over the top of the apples. Return the dish to the oven and bake for about half an hour, or until the top is golden brown.
